Mom's Banana Bread

Yield: 8 per loaf

  • cup butter softened unsalted
  • 1 cup sugar white, granulated
  • 2 bananas ripened and crushed
  • 1 ½ all-purpose flour
  • 2 eggs large, beaten
  • 1 TSP baking soda
  • 1 TSP salt
  • 1 TSP vanilla


  • Preheat oven to 350 degrees
  • Cream butter and sugar
  • Add beaten eggs and crushed bananas
  • Add vanilla
  • Sift together flour, baking soda and salt
  • Add dry mix to wet, careful not to over stir
  • Add to greased and floured bread pan
  • Bake for 55 minutes at 350/180
  • Cool for 20 minute on a rack in pan
  • Gently run a butter knife around the edges
  • Cover bread with wax or parchment
  • Quickly flip pan upside down with hand over paper and bread
  • Gently tap the bottom of the pan and the bread should slide out
  • Place another piece of wax or parchment on the bottom of the bread and flip over on to a cutting board or platter
